Recipe: Pasta salad with artichokes
Preparation: 5 minutes
Cooking time: 10 minutes
TOTAL TIME: 15 minutes
Difficulty: very easy
For 3 people:
- 250 g of pasta “Butterflies” from durum wheat
- 1 jar of “Perchè ci credo” artichokes with orange
- 80 g of tuna canned in water
- 60 g of Emmental cheese
- 20 g pitted black olives
- 10 ml extra virgin olive oil
- 10 fresh basil leaves
- salt to your taste
- Boil water in a pot. Add the salt, add the pasta and cook “al dente”
- Drain the artichokes well and cut them in half
- Dice the Emmental cheese
- Drain the tuna well and break it into small pieces
- Drain thoroughly the pitted black olives
- Mix all the ingredients in a bowl adding the extra virgin olive oil
- Drain the pasta well and pour into the cup. Mix the remaining ingredients and garnish with basil leaves. Serve
Tips: You may use mild provolone cheese instead of the Emmental or replace the tuna with anchovies or salmon
Suggested wine: Dry white wine
