Recipe: Pasta “Gramigna” with cherry tomatoes sauce, arugula, and pork sausage

For 3 people:
- 250 g of pasta “Gramigna” from durum wheat semolina
- 1 jar of “Perchè ci credo” tomatoes and arugula sauce
- 70 g of fresh pork sausage
- 15 g of Parmigiano Reggiano cheese
- 5 leaves of fresh arugula for garnish
- 20 g of extra virgin olive oil
- 15 ml of “Locorotondo” white wine type
- Boil water in a pot. Add the salt, add the pasta and cook “al dente”.
- Pour olive oil in a pan and heat it. Add the fresh pork sausage cut into slices 1 cm thick and deglaze with white wine. Cover and simmer for five minutes (until the sausage is cooked)
- Pour the “Perchè ci credo” tomatoes and arugula sauce in the pan, mix in the sausage, and heat while stirring with a wooden spoon
- Cook the pasta al dente, drain and pour into the pan and add cheese. Flip it for a minute, possibly with a little buff of extra virgin olive oil and serve garnished with fresh arugola leaves.
Tips: You may use chicken sausage instead of pork sausage or cheese pecorino cheese shavings instead of grated cheese
